Darren Tait, director of culinary services provided an overview of Te Pae's culinary approach and Des Davies, executive chef introduced each course to guests.
Guided by a “mountains to sea” philosophy, each dish brought together ingredients sourced as close to Te Pae as possible, connecting guests to the landscapes and producers of the Canterbury region. Te Pae continues to build relationships with local growers, farmers and artisans – now reaching 91% locally procured food and beverage.
